Tasting Notes: Chocolate, stone fruit, berry, spice, dried apricot and banana
Process: Natural
It is a privilege to offer this standout Yemeni bean to my Tod's Coffee Family! High quality Yemeni beans are typically only available at the highest end Third Wave coffee shops, and very seldom can you buy a bag to take home...they will only sell you a pour-over cup for $10. This is your opportunity to brew your own Yemeni beans at home.
When it comes to Yemeni coffee, Matari is always a standout, expressing balanced chocolate flavors, fruited sweetness, chai spice, dried apricot, banana, berry, baked apple, sandalwood...it is not a stretch to say that Yemeni beans are some of the most complex coffees out there.
Matari has a rustic appeal with syrupy sweetness, dried fruits, earth and spice notes, and as stated before, a whole lot more. The dry fragrance produces smells of dried banana, sweet squash, nut brittle, and aromatic sandalwood. The wet aroma has a nice balance of cocoa and fruit smells, earth-toned chocolates, and hints of stewed berry. Matari shape-shifts in the cup. While hot and as the coffee temperature cools a bit. Each point along that journey has its own character and flavors. It really is a unique experience to drink a cup of Yemeni coffee, and one that you will not forget. As with all my Signature Series beans, this Matari will come into its own after at least a week in the bag, so please be patient when it arrives...it's worth it!
*The LIMITED Signature Series are very small micro-lots of uniquely, high scoring beans. They will be available periodically when I can get my hands on these one of a kind offerings. When they're gone, they're gone. This will allow you to try some really unique tasting coffees at a more affordable price. These are best reserved for manual brewing and will only be available whole bean.
**Believe it or not beans are not at their best just off of roast. To be at their peak it is best to let them sit for about a week. Beans reach their peak on weeks two and three...week four is still a great week for the beans, but they are starting to lose a bit of zing at that point.
With the Signature Series we will still ship you freshly roasted beans, but it is highly recommended that you let the bag age for a week before opening and then finish the bag within two weeks...three weeks max.
